Quesadillas
Tasty & healthy mexican appetizer in a 'jain' style.

Preparation Method

      For the Tortillas
    1. Mix all the ingredients alongwith warm water to knead to a soft dough. Keep it aside for 1/2 an hour. Knead again.
    2. Divide the dough into 24 equal portions of round balls.
    3. Roll out the dough into a round shape with the help of some whole wheat flour.
    4. Cook the tortilla on a tava (griddle) and keep aside. Similarly make the other tortillas.
      For the Stuffing
    1. Mix well all the ingredients.
    2. Divide the stuffing into 12 equal portions.
    3. Put the stuffing on one tortilla and spread it evenly. Then place another tortilla on top such that they stick to each other.
    4. Place it on a pre heated griddle. Put some oil on both the sides.
    5. Cook until crisp.
    6. Cut the quesadilla into pieces and serve hot with tomato ketchup / coriander green chutney.

      i was concerned with regards to the filling of the 'Quesadillas',would taste better if the filling could have some mozzarella cheese which allow the 2 breads to stick, which paneer does not as it does not melt, and the oil too.

    1. 1 1/2 cup whole wheat flour
    2. 3 cups homemade maida
    3. 8 teaspoons oil
    4. salt to taste
    5. For the stuffing
    6. 2 cups grated paneer (cottage cheese)
    7. 2 teaspoon green chillies (hari mirch, chopped)
    8. 4 tablespoon capsicum (chopped)
    9. 1/2 cup boiled sweet corn kernels (makai ke dane)
    10. few cubes of paneer (pieces)
    11. salt to taste
    12. oil
