Thepla
Theplas are mildly spiced rotis, enjoyed at mealtime. They are an ideal food when traveling or on picnics.

Preparation Method

      For the Dough
    1. Mix all the ingredients. Knead to a soft, smooth dough, using extra water, if required. Cover for 10 minutes.
    2. Knead again and divide the dough into 14 equal portions.
      To Proceed
    1. Roll out each portion into even rounds.
    2. Pre-heat the griddle on a medium flame. Place the thepla on it. As brown spots appear on the underside, turn it over.
    3. Smear one teaspoon of oil over and around the edges. Press lightly with a spatula. Turn it over and press again. Remove, when golden brown spots appear.
    4. Repeat for rest of the portions. Place them on an absorbent paper.
    5. Serve hot.

      For the Dough
    1. 2 cups whole wheat flour
    2. 3/4 cup sour curds or 2 teaspoons lemon juice
    3. 1 teaspoon chilli powder
    4. 1 teaspoon dhana jeera powder
    5. 1/2 teaspoon turmeric powder
    6. 2 tablespoons oil
    7. 1 cup coriander leaves (chopped)
    8. 1 teaspoon carom seeds (optional)
    9. water (if required)
    10. salt to taste
    11. For Rolling and Dusting
    12. wheat flour (as required)
    13. oil (to roast theplas)
