Teekhi Sev
Mild or fiery spiced sev, are great munches, any time of the day.
    Preparation Method
  1. Mix all the ingredients. Knead to a soft dough.
  2. Fill little mixture in a dough extruder.
  3. On a high flame, heat oil in a frying pan. Lower the flame. Press the dough through the extruder, in circular movements. Let the strings (sev) fall as one piece directly in the hot oil.
  4. On a medium flame, deep-fry, till light golden in colour. Turn over for even frying. Remove, drain and put on an absorbent paper. Repeat for rest of the dough. Cool and store in an airtight container.

  1. 1 cup bengal gram flour (besan)
  2. 1 teaspoon red chilli powder
  3. 1/2 teaspoon carom seeds (optional)
  4. pinch of soda-bi-carbonate (optional)
  5. 3 tablespoons oil (for dough)
  6. 4 tablespoons water (approx.)
  7. salt to taste
  8. oil to deep fry

  10. dough extruder
  11. plate fitted with big holes
