Tarbooz ki Sabzi
Tarbooz is a small, green, oval vegetable from the gourd family. They taste good, eaten with rotlis and rice.
    Preparation Method
  1. Peel and cut tarbooz into small cubes.
  2. In a pan, heat oil on a medium flame. Add mustard seeds. As they crackle, add asafoetida, tarbooz and salt. Cover the pan. Keep the lid slightly open.
  3. Pour water on the lid for vaporization.
  4. Cook on a low flame for 15 minutes. Add the dry spices. Stir well. Cook till tender.
  5. Garnish. Serve hot with rotis and rice.

  1. 500 grams tarbooz (water melon)
  2. 1 teaspoon heaped red chilli powder
  3. 1 1/2 teaspoons heaped dhana-jeera powder
  4. 1/2 teaspoon turmeric powder
  5. pinch of asafoetida
  6. 1/2 teaspoon mustard seeds (optional)
  7. 3 tablespoons oil
  8. salt to taste
  9. coriander leaves (to garnish)
