Adad Ki Roti
This roti, prepared on an earthen griddle imparts a delicious and exotic flavour.
    Preparation Method
  1. Mix all ingredients together. Knead to a firm dough. Divide it into 2 equal portions.
  2. Knead each portion well. Shape into round balls.
  3. Dip one ball in the flour. Flatten and pat it
  4. on the rolling board or between your palms to make a round circle 1/4" thick.
  5. Pre-heat the griddle, on a low flame. Smear it with a teaspoon of oil. Put the roti on the griddle.
  6. Cook each side of the roti till crisp.
  7. Brush the griddle with little oil if needed.
  8. Repeat for the second portion.
  9. Serve hot with jaggery, sadu besan, kachumber, tempered green chillies and sour mango pickle.
    Additional Note
  • This roti should be served crisp. It can be cooked on a regular griddle also.

    For the Dough
  1. 1 cup whole black bean flour
  2. 1/2 teaspoon carom seeds
  3. 1/4cup water (approx.)
  4. salt to taste
  5. For Rolling and Dusting
  6. black bean flour (as required)
  7. 2 teaspoons sesame oil (to roast)
  8. Special Equipment: Optional
  9. earthen griddle (mitti ki tavi)
