Lemon Rice
    Preparation Method
  1. Heat oil in a non stick pan. Add asafoetida, mustard seeds, methi seeds, dry red chillies, curry leaves, peanuts and urad dal. Sauté till the dal turns golden brown.
  2. Then add the remaining ingredients, turmeric powder, rice, salt and lemon juice. Sauté the mixture well. Cook on a low flame till the rice gets cooked properly.
  3. Garnish with little coriander and serve hot.

  1. 3 cups boiled rice
  2. 4 tablespoons oil
  3. 1/4 teaspoon of asafoetida (hing)
  4. 1/2 teaspoon fenugreek seeds (methi seeds)
  5. 1/2 teaspoon mustard seeds
  6. 10-12 curry leaves
  7. 1 tablespoon split black gram (urad dal)
  8. 2 whole dry red chillies
  9. 1 teaspoon turmeric powder
  10. 1 cup peanuts
  11. 6 tablespoons lemon juice
  12. coriander leaves (to garnish)
  13. salt to taste
