Besan Dhokla
Prepared quickly, dhoklas are a substantial dish, served with a meal or as snacks.
    Preparation Method
  1. Mix all the ingredients for the batter. Prepare a thick batter of dropping consistency.
  2. Lightly grease the dhokla plates with oil.
  3. On a high flame, boil water in the steam cooker.
  4. At the time of steaming, add the other ingredients to the batter. Whisk well. Pour it equally in each plate.
  5. Place plates in the steam cooker for 5 minutes. Remove the plates. Sprinkle little water over the dhoklas. Cool them. Apply ghee over them.
  6. Cut them into square or diamond shape pieces.
  7. Proportionally pour tempering as on khaman dhoklas. Serve with green coriander chutney.

    For the Batter
  1. 1 cup bengal gram flour
  2. pinch of asafoetida
  3. 2 green chillies (finely cut or paste)
  4. 3/4 cup water
  5. salt to taste
  6. Other ingredients
  7. 1/2 teaspoon eno or soda (edible)
  8. 1 tablespoon lemon juice
  9. 1 teaspoon sugar
  10. 2 tablespoons oil (warm)
  11. 2 teaspoons oil (to apply on plates)
  12. ghee (to apply on dhoklas)
  13. coriander leaves, coconut (grated - to garnish)
