Kanki or broken rice in a meal, cools and balances the equilibrium of the body.
    Preparation Method
  1. Wash rice thoroughly. Drain. In a pan, add rice and water.
  2. Cover and cook on a low flame for 10 minutes.
  3. Add salt. Stir well. Cover and cook again till the grain is tender. Add ghee. Gently mix well. Serve hot with vegetables.
    Additional Note
  • Pressure cook kanki with salt up to 3 whistles. Add ghee. Stir gently. Serve hot.

    This is incomplete recipe.
    you cook rice in buttermilk or curd +water required to cook the rice
    for tempering : 1 tsp ghee+ cumin seeds+ sesame+ mustard seeds + green chillies + curry leaves+ asafoetida (hing).
    For garnishing : finely chopped coriander leaves.
