Kanki or broken rice in a meal, cools and balances the equilibrium of the body.
- Wash rice thoroughly. Drain. In a pan, add rice and water.
- Cover and cook on a low flame for 10 minutes.
- Add salt. Stir well. Cover and cook again till the grain is tender. Add ghee. Gently mix well. Serve hot with vegetables.
- Pressure cook kanki with salt up to 3 whistles. Add ghee. Stir gently. Serve hot.
