Kanki Ka Khichu
    Preparation Method
  1. On a low flame, melt ghee in a pan. Add cumin seeds. As they crackle, add rest of the ingredients and water.,
  2. On a low flame, cover and cook for 10 minutes. Stir well.
  3. Cover and cook again till the water is absorbed.
  4. Garnish. Serve hot with ghee, fresh curds, and methi ka masala.
    Additional Note
  • Khichu can be prepared ahead. Steam before serving.
    For kanki ka khichu pressure cook all the ingredients up to 3 whistles.

  1. 1 cup broken rice
  2. 1 teaspoon cumin seeds
  3. 2 teaspoons sesame seeds (white)
  4. pinch of asafoetida
  5. 1/2 teaspoon papadia khar
  6. 2 teaspoons green chillie paste
  7. coriander leaves (optional, to garnish)
  8. 2 tablespoons ghee
  9. 3 cups water
  10. salt to taste
